Edge by Paco Pérez sits on the rooftop of El Fuerte Marbella, a five-star hotel in the centre of town, looking straight out over the shoreline.

I came for the chef. Paco Pérez is a Michelin-starred name, and Edge is his contemporary Mediterranean rooftop restaurant on the Marbella coast.

The catch is that it's an occasion place, not a casual drink-and-go. You come for a proper sea-view dinner, and you book ahead to get one.

What Is Edge by Paco Pérez?

Edge is the rooftop restaurant on top of El Fuerte Marbella, a five-star beachfront hotel in the centre of town. It's run by Paco Pérez, a Michelin-starred Catalan chef, and the cooking is contemporary Mediterranean built around Andalusian produce.

You don't need to stay at the hotel. The rooftop is open to the public for diners with a reservation. Walk through the lobby and take the lift to the top.

It sits a short walk from Marbella's old town and the beachfront promenade. That makes it one of the few genuine rooftop restaurants in central Marbella, so weekend tables go fast.

The Vibe

The rooftop feels polished without being stiff.

Early evening leans cocktail-and-conversation, with guests settling in for aperitifs as the sun drops toward the water. Then the room tightens up for dinner, with candlelit tables and full attention on the plates.

Music stays low enough to talk over. The design is modern and clean, and it leaves the view to do the talking.

The crowd skews adult and dressed-up. It suits anniversaries and milestone dinners more than a loud night out, so aim to arrive around 8pm to catch the light before the kitchen gets busy.

The kitchen reads Mediterranean, seasonal, and product-driven, a style Paco Pérez calls "cocina Mediterránea viajera". The menu runs to 22 dishes and 5 desserts, and it changes with the season. Expect:

If you want a proper dinner with a sea view, Edge hits the brief.

The wine guidance is confident and the cooking stays true to the coast. I'll be honest, though: reviews on the service are mixed, and on a busy night the pace can lag between courses. Go for the setting and the kitchen, and don't be in a rush.

Best for: Couples celebrating something special, design-minded diners who care about both food and setting, wine lovers wanting expert guidance, and anyone after a polished evening on the coast.
